When collagen is produced, there is a complex series of events, some occurring inside of the cell, and some outside of the cell. Vitamin C is active inside of the cell, where it hydroxylates (adds hydrogen and oxygen) to two amino acids: proline and lysine. This helps form a precursor molecule called procollagen that is later packaged and modified into collagen outside of the cell. Without vitamin C, collagen formation is disrupted, causing a wide variety of problems throughout the body. (source)
The role of vitamin C in the production of collagen is to interact with amino acids within collagen cells. It adds hydrogen and oxygen to those amino acids, so that they may do their part in collagen production. If you don’t get the proper amount of vitamin C, collagen production will slow. A decline in collagen production will not only make skin more susceptible to wrinkles, but it might also make it more susceptible to bruising.
Sammen med jern er C-vitamin nødvendigt for dannelsen af en af de 20 aminosyrer, kroppen bruger til at opbygge protein. Denne aminosyre indgår i proteinet kollagen, der er den trækstærke bestanddel i sener, brusk, tandkød og knogler. Mangler man kollagen medfører det, at de mindste blodkar bliver skøre, og sår heler dårligt.
O: Da der indgår kollagen i både brusk og knogler, bliver dannelsen af dette væv også defekt. Får man ikke tilstrækkelig C-vitamin, medfører det på længere sigt den klassiske mangelsygdom skørbug.
